Food preservation expertsReplacing a synthetic preservative is the single largest theme on Halo. Natural antifungals and plant extracts outnumber everything else, a second cluster coats fresh produce, and a third kills microbes with plasma, radicals or microwaves in place of heat. Stage of development. Work on food preservation methods on Halo comes mostly from companies. 30% of the solutions are in market. Co-development and sponsored research are the usual partnering routes, and about 46% of the solutions that state terms offer pilot engagements.
Replacing the synthetic preservative. Ten entries offer a natural antimicrobial and almost all of them name what they replace. Chitosan on its own and chitosan with tannin, hemp terpenes, medium chain fatty acids against a named spoilage yeast, polyphenols bio-transformed out of grape pomace, and antifungals from medicinal plants. The label is the requirement; the chemistry follows from it.
Flour turns out to be a problem of its own. Three separate entries treat wheat flour, each at a different point and with a different agent: gas-phase hydroxyl radicals, an organic antimicrobial dosed at the tempering stage of milling, and nebulized hypochlorous acid. All three make the same promise, that the flour still bakes the way it did. Low-moisture pathogen control is a narrow, stubborn problem.
The coating does the preserving. Five entries put something on the outside of fresh produce: a plant-based film, a water-based emulsion carrying antifungal agents, biodegradable nanocoatings, lipid ultra-thin films, and hexanal as a fumigant on table grapes. Nothing is added to the food itself, which is the point when the product is a grape.
