This solution involves the development of heat-moisture resistant carriers that enhance the bioavailability of probiotics during high-temperature and moisture-intensive food processing. By using a novel combination of plant glycoproteins, polyphenols, and polysaccharides, these carriers are designed to protect probiotics from degradation during processing and ensure targeted delivery to the colon. This approach addresses the challenge of maintaining probiotic viability and enhancing their bioaccessibility to the gut microbiota.
This technology is currently at TRL 3. The development focuses on evaluating heat and moisture-resistant microcarrier systems and prototyping probiotic gummies. The project aims to identify optimal components and processes for effective probiotic protection and delivery, with a projected validation timeframe of one year.
