Discover a sustainable, low-energy alternative for xylitol production using genetically engineered yeast, achieving virtually 100% yield from xylose with high specificity and productivity, offering a viable solution to replace nonsustainable chemical processes.
This innovative solution presents a sustainable and low-energy alternative for the production of xylitol, a sugar alcohol used as a sweetener in various food products. Traditionally, xylitol is produced through a chemical process involving high pressures, temperatures, and catalysts, which results in high energy consumption and low selectivity. The proposed method utilizes a genetically engineered yeast strain that transforms xylose into xylitol with nearly 100% yield, high productivity, and without generating other polyols. This biological process is not only eco-friendly but also economically advantageous, offering a more sustainable avenue for xylitol production.
Currently, this technology is at TRL 4, having been validated in laboratory settings. Further development and optimization phases are scheduled, aiming to advance the readiness level for broader application and commercial use.
Founded in 2023, Ex Seed is a deep-tech food startup from Bulgaria focusing on plant protein innovation. The founders combined chemical engineering expertise with a sustainability ethos to tackle waste from sunflower oil production – a significant industry in Eastern Europe. Ex Seed is part of an incubator program and is gaining attention for promoting sunflower protein as the next big plant protein.
