This innovative solution leverages bio-inspired structural whitening by using porous food-grade biopolymer microparticles to achieve desired whiteness and opacity. These microparticles are derived from plant-based proteins and other natural ingredients, making it suitable for vegan, kosher, and halal products. StructuraWhite™ offers a clean-label alternative to traditional mineral whiteners, ensuring minimal impact on taste and texture.
The StructuraWhite™ platform uses a unique method involving high-shear foaming and spray drying to produce microparticles with controlled internal air voids, maximizing light scattering. Key components include zein, pea protein, cellulose, and pectin, with optional enzymatic crosslinking to enhance stability. The microparticles are designed to range from 5–30 µm in size, offering high opacity for coatings and mass-whitening applications while maintaining the product's flavor and pH balance.
Currently, StructuraWhite™ is at Technology Readiness Level 3, indicating that the technology is in the experimental proof of concept stage. The development program includes optimization and validation phases, focusing on particle formulation, performance in food systems, and pilot-scale production, leading up to commercialization.
