By utilizing a high-solids structured gel matrix combined with hydrocolloids such as low-methoxyl pectin or gellan, the system effectively reduces water activity and controls pH levels using a citrate-based buffer. This innovative method minimizes creatine degradation during processing and storage, providing a stable, sensory-neutral, and cost-effective solution for manufacturers.
