Innovative Spirulina muesli powder enhances beverage nutrition by fortifying nutrients and using fermentation. Ultrasound-double emulsions encapsulate sensitive compounds, improving taste and stability. AI tools assess sensory attributes, offering a durable solution for gluten-free and vegan diets.

Overview

This innovative solution involves the development of Spirulina muesli powder designed to fortify both powder and liquid beverages, especially fermented ones. By leveraging Spirulina's rich nutrient profile, including minerals, vitamins, essential amino acids, and omega-3 fatty acids, this powder enhances the nutritional value, quality, and functionality of beverages. It is particularly beneficial for gluten-free and vegan diets, offering a highly digestible protein source more effective than traditional milk powders.

Technical specifications

The solution utilizes ultrasound-double emulsions to encapsulate oxygen-sensitive compounds like omega-3 and vitamin E, thus preventing off flavors in beverages. The muesli powder acts as an instant supplement, while fermentation processes release and increase the concentration of essential nutrients such as minerals and polyphenols, also reducing anti-nutritional factors to create allergy-free beverages. AI technologies, including electronic nose, tongue, and eyes, are employed to evaluate and optimize the sensory qualities of the new beverages.

Technology readiness level

The technology is at TRL 5, indicating that it has been validated in a relevant environment. High power ultrasound techniques have improved emulsion stability, and recent studies have demonstrated the successful encapsulation of nutrients, ensuring their stability and efficacy for up to 30 days.
