The novel allitol sweetener developed by Ex Seed is a zero-calorie alternative to common sweeteners like xylitol and erythritol. This sweetener is produced using a proprietary yeast-based process that transforms glucose and starch feedstocks into allitol. Unlike other polyols, allitol does not cause gastrointestinal side effects or have a strong cooling effect, and it is safe for animals. Additionally, it maintains non-reactivity at high temperatures, making it suitable for various culinary applications. The cost-effectiveness of this production process could make allitol a competitive product in the sweetener market.
