Overview

Proprietary natural, non-antibiotic compounds are developed to inhibit spoilage bacteria in food products, such as meats and sauces. The antimicrobial compounds are derived from secondary metabolites isolated from plants and wild-type bacterial and fungal strains. The objective is to enhance shelf-life by targeting specific lactic acid bacteria (LAB) spoilage strains, including Lactiplantibacillus plantarum and Leuconostoc mesenteroides, without resorting to antibiotics.
