Technology readiness level

This program is at an early-to-mid stage of development. The underlying methodology for screening taste- and chemesthetic-modulating compounds has been demonstrated in prior work on bitterness suppression and oral burn reduction for non-nutritive sweeteners, ethanol, and capsaicin. The current research extends these methods to saltiness perception of electrolytes. Initial characterization of the sensory profile of target electrolytes and screening of candidate GRAS compounds and nano-scale approaches are planned or underway. Further validation, including expanded panel testing and product-format evaluation, is required before commercial deployment.
