The brewing enzyme portfolio covers the full production process: amylases and glucoamylases for mash conversion, beta-glucanases and xylanases for filtration improvement, proteases for haze prevention, and acetolactate decarboxylase for diacetyl reduction. For the growing low- and no-alcohol beer segment, Novonesis provides specialized enzyme systems and yeast strains that produce full-flavored beer with minimal or zero ethanol. The wine and juice portfolio includes pectinases for clarification and cultures for controlled malolactic fermentation.
