Overview

Our solution leverages plant metabolite-rich extracts to create antimicrobial coatings that control molds and yeasts in food products. These coatings are designed to achieve at least a 3 log-reduction in microbial growth while being food-safe, affordable, and maintaining the sensory qualities of the food. The solution is adaptable, with delivery systems like powders, sprays, and coatings optimized for specific products and processes. This technology not only extends the shelf life of food products but also integrates seamlessly with existing food processing technologies.

Technical specifications

Our antimicrobial coatings utilize plant extracts known for their antioxidant and antimicrobial properties. These extracts are stable under common food processing conditions and can be enhanced with mild heat, light, or ultrasound technologies. The concentration and composition of the extracts are customizable through advanced extraction methods, ensuring efficacy across various food systems. Our research indicates that synergistic interactions between compounds in these extracts enhance their effectiveness compared to purified compounds alone, offering a robust solution for food safety and preservation.

Technology readiness level

Currently at TRL 5, this technology has been validated in laboratory settings. We are conducting further experiments to optimize the concentration, delivery systems, and synergistic activities with existing food processing steps. We aim to refine these coatings for real-world applications, with plans for extended validation and stability testing.
