This research focuses on developing alternative hydrogenation methods to increase the melting point of oils without creating harmful trans fats. Conventional methods often result in the formation of trans fatty acids, which are linked to non-communicable diseases. The study aims to explore fermentative, enzymatic, and electro-chemical techniques that modify the fatty acid profile of oils, enhancing their stability and melting point while maintaining safety and eliminating trans fats. These innovative approaches provide natural, non-hazardous alternatives suitable for the food industry.
Currently, the research is at Technology Readiness Level 3, involving experimental proof of concept. The study is planned to progress through six stages, from proposal development to laboratory trials and data analysis, to validate the hypothesis and refine the technology.
Bahir Dar University is a comprehensive public research university serving Ethiopia and the Horn of Africa, combining large-scale education with applied research and community engagement. Industry partners access engineering talent and prototyping capacity through the Bahir Dar Institute of Technology and the Ethiopian Institute of Textile and Fashion Technology, which maintain facilities and liaison structures for contract work and problem‑solving with manufacturers.
