This solution introduces a cutting-edge method to enhance sweetness with minimal sugar content using electrostatic spray-drying (ESD) technology. By encapsulating sweetness potentiators, aroma cues, and bitterness-masking agents into core-shell particles, it offers an innovative approach to mimic the taste profile of sugar without its high caloric content. This technology is particularly valuable for food and beverage industries aiming to offer healthier, low-sugar products without compromising on taste and mouthfeel.
Currently at TRL 3, the technology is in the laboratory validation phase. Future plans include assembling a library of natural potentiators, optimizing formulation and process parameters, conducting sensory and analytical validations, and preparing for scale-up and regulatory compliance.
