Liquid-liquid phase separation (LLPS) to control the adhesive, mechanical, and solution properties of polysaccharides and proteins. LLPS can be tailored to induce or delay gelation, perform as an underwater adhesive, or produce nanofibrillar fibres with better crystal alignment.
